Winemaking

Our winery houses vintage operations - crushing, pressing, fermenting; and further racking and bottling. Barrels and bottled wines are protected from heat by a fully insulated, air-conditioned barrel shed.

Intervention in the winery is kept to a minimum, as our focus at Amulet is to deliver high quality fruit from the vineyard, so that the grapes and musts reflect our site without much further 'working'. We do not bleed (saignee) juice from our reds to intensify colour, as we believe that colour comes from the vineyard and that bleeding removes the best free-run juice. Our Rosato is therefore a seriously made wine and not a 'by-product' of red winemaking.

Styles

Chardonnay/Orange Muscat: An unwooded aromatic crisp dry white
Pinot Grigio: A fuller richer savoury dry white made in the Italian style from Pinot Gris
Rosato: A dry and flavoursome rosé style made from Sangiovese, Shiraz and Cabernet
Shiraz: Rhone varietal displaying marked white pepper flavours in cooler years
Sangiovese: A perfumed medium bodied dry red; the classic variety of Chianti from Tuscany in central Italy
Barbera: A medium bodied red, the variety originating in Piedmont in northern Italy
Nebbiolo: A winemakers dilemma or demon, being low in colour, and high in tannin and acid. The noble Barolo's from northern Italy are made from this grape
Merlot/Cabernet Sauvignon: A 60:40 blend of classic Bordeaux varieties
